As Salt Fibre comes with a 10Gb RJ45 - which RJ45 to SFP+ transceiver can be recommended with the latest firmware on the UDR7?

You can either completely replace your Salt modem, but you will need an SFP module such as the WAS-110 XGSPON, or you can connect the UDR7 to your modem using an RJ45 cable (bridge mode or double NAT).

well, it doesn't really matter. the max ISP for UDR 7 is 2.3Gb/s
you will never be able to use the full bandwidth with UDR...
