However, the devices have an e-Sim AND a normal sim card slot. Can I now run my primary mobile phone subscription via the e-Sim, and the secondary sim card via the "normal" sim slot? Would that work?

No, Google doesn't make dual-sim devices. Never has been, just as little as Nexus/Pixel with external SD card. ;)
The eSim also only works with Project FI, which as far as I know is not available in Switzerland. https://productforums.google.com/forum/#!topic/phone-by-google/PSjRN8yAJw4
