Is it possible to regulate the operating pressure? For example, I only need a constant 5 bar for a machine?

This is possible without any problems. The red rotary knob can be used to set the desired pressure. However, the compressor does not switch off when the pressure is reached, which it does at Max Bar. Does not matter. But it is worth mentioning.
